Tender and delicious chicken:
1. After washing the chicken, put a small amount of onion and ginger into the chicken belly.
2. Add water in a pot, add scallions, ginger slices and cooking wine, and bring to a boil over high heat
3. Turn the heat to medium, keep it bubbling, put the chicken in it and cook, lift the pot four to five times in the middle, and pour out the water in the cavity to maintain the same temperature inside and outside.
4. Turn off the heat and cover to simmer for about 15 minutes. Insert the chicken leg with chopsticks and remove it without blood spill.
5. After removing the chicken, immerse the whole chicken in ice water for 20-30 minutes.
6. Remove to dry and cut into pieces. Serve with spices such as sesame oil, scallion oil and light soy sauce.
Stewed mushroom with chicken
Step 1 Cut the chicken into pieces. Soak the mushroom in warm water for 10 minutes, rinse and soak again in warm water.
2. Quickly blanch the chicken pieces in boiling water, skimming off the froth.
