The 2GR Wagyu Calf Shank (MB 0–9, 1.3–1.5kg) boasts a delicate texture, rich flavor, and a springy texture. Harvested from the hamstring of young Wagyu cattle, it boasts evenly distributed fascia, a high gelatin content, and a rich, light-bodied texture. The long simmering broth creates a bright, translucent texture, while the meat remains tender and not dry, its flavor developing with each simmer. Suitable for braising, stewing, braising, pressure cooking, or slow cooking, it can also be sliced and cooked in hot pot, served in Wagyu beef noodles, or served cold.
