Made with select plump chicken feet, the nails are removed by hand, and the feet are first fried and then braised to achieve a tiger-skin texture – tender skin, thick meat, and plenty of tendons, resulting in a firm and chewy texture. It's then stir-fried with Erjingtiao peppers, Litsea cubeba, and Qixing peppers to create a chili oil coating. The peppers are roasted over low heat to release a unique charred aroma, resulting in a spicy and flavorful treat that penetrates to the bone without being overpowering; even the bones are infused with fragrance.
